Default recipie for home made mayonaise

Karen would you happen to have one .. or anyone? Please and Thank you in advance..
Due to my thyroid. not able to eat the regular. which I love the Hellmans but I would like to try to make my own but not having much luck.. finding a recipie..

I always make my own

So good and so easy!

(most do have raw egg yolks though so people with compromised immune systems shouldn't risk it. I've never had a problem in years. )


Classic Mayo

4 egg yolks
2 tsp salt
2 tsp dry mustard (I've done without this, and just added a 1/2 tsp of prepared mustard)
dash cayenne pepper
juice of 1/2 lemon
2 c. vegetable oil

Process all ingredients except oil in food processor. with processor running, add oil in a very thin stream until incorporated.

Keeps 1 week.

I make my own mayo. I use 1 1/2 c.olive oil and 1/2 c. of veg oil. I think it is more healthy. I only use 2 egg yolks and add 1 T. of no salt seasonings. You can play with the seasonings and alter it to your taste. I also sub. vinegar for the lemon juice.
Ist mix the yolks, vinegar, mustard, seasonings and 1/4 c of the oil. After its mixed well the slowly dribble in the rest of the oil.
Good luck, you will get the hang of making your own mayo and using seasoning that you like.

I think it is a GREAT idea to make your own mayo!! All the mayo in canada here has sugar in it. You could also try adding splenda to your home made stuff along with the seasonings.

I was looking through Karen's receipts and she has a really good receipt for mayo. She also gave a list of suggested seasonings. I don't use any type of sweetner and sub 75% olive oil and 25% veg oil. I use olive oil because my cholestral is so very high and it helps get rid of the bad LDL, I hope.
