Default Packed Lunch Ideas

We are starting the South Beach Diet this coming Monday.

I pack a sack lunch for my boyfriend and myself. I was wondering what some ideas for quick lunches are. I think the frozen chili and soups are going to be our best bets.

1. bell pepper stuffed with hummus, veggies, lf cheese- could add turkey or stuffed with bean salad
2. turkey slices and raw veggies and laughing cow cheese to make roll ups
3. raw veggies and cottage cheese (especially tomatoes)

For snacky things to add:
1. a hard boiled egg
2. nuts
3. string cheese
4. veggies and dip/hummus

Great ideas.....for the turkey wraps...what do you use to hold it all together? Just the turkey slices on the outside? Sorry for being a ditz.

exactly- take a slice or 2 and spread a little laughing cow cheese on it, then put a celery stack or whatever veggy and roll it up
I use tofurkey, because I'm vegetarian, but turkey would work the same way I imagine.

You can also wrap it up with a romaine lettuce leaf.

My staple packed lunch is tuna salad or chicken salad. You can pack some celery to dip it with if you choose.

Another good one is ground beef cooked up in a bowl with mayo, mustard, pickles and cheese (burger in a bowl)...or you could use turkey as a lower fat meat

I discovered on this diet that I'm wheat intolerant. That cuts out most menu items at lunch cafes and fast food restaurants. I've learned to work around it, but discovered packing my own lunch saves me money and eliminates the wheat issue. I generally plan my evening meals so I can bring left overs from the night before, but that requires one has a microwave available. I'm also a salad freak, so try to make a huge salad on the week-end that will last my husband and I a few days. I also love fresh fruit salad, so make a batch of that on the week-end. Celery and humus is always good, but I generally eat that for a morning snack (weird, I know). I also love hard boiled eggs, so cook up a half dozen of those on the week-end to take intermittently.
