What kind of LC bread do you use? I can't decide between the Natural Ovens bread I already have in the house (kind of grainy though). Atkins country white bread mix (sounds like a pain to make with all the kneading and rising-- I don't have a bread machine) or a few other bread recipes I've found. Is the bread you use a wheat or a white?

I'm really stuck here on the bread part and Thanksgiving is coming up fast!

Tried to search for stuffing in our Kitchen, here's a recipe that sounds interesting. I also remember seeing someone say they will be making their grandma's original stuffing recipe using Aunt Millie's whole grain Light bread, I think it was 4g a slice???

Cut 1 head of cauliflower in chunks and steam until soft. Cut in corn
size pcs.

Bake in oven while roasting meat. (I do it by itself in a 350 oven until
hot and cheese melts)

Let stand while you get the rest of the dinner ready.

I made this last year for Thanksgiving and Christmas, and IS IT EVER GOOD!!!!! I love stuffing, and although this doesn't have the bread, it is sooo yummy. I saw a recipe on a pork rind site for stuffing, and I think that I will add some to this recipe for this year, because I already know that I like the flavor of it, and I think the porkrinds will just give it a bit of "breadiness".

I didn't use hot sausage and I didn't use red pepper flakes. Those seem wrong in stuffing to me. I just used regular pork sausage.

Red, thanks for the good review on the stuffing recipe. It sounded good to me, but it's nice to hear it's good from someone who's tried it!

Made the Pumpkin Bread -the one with almond flour, etc. It was good, but way too sweet. Instead of 1 cup splenda, will use 3/4 or less next time. Am thinking this would be really good with some cream cheese incorporated? yum. It was a tad on the "eggy" side too I thought-but still good-I'd make it again.

I think I ended up with a fine almond meal, btw LoveSong-it seemed to work ok tho. I've not seen almond flour around where I live.

Sooo, all these recipies are great, but they all seem very high it carbs when combined into one meal....'specially for those still trying to stay at induction levels. Guess I'll have to suffer or just eat once that day and drink lots of water.

pretty good article.

Still, I gotta cook most of my family's dinner, plus my dinner, which I guess is gonna give me tons o' leftovers and cost me more... I'm gonna be spending a lot of time cutting these recipes in half it looks like...

This is a great thread! I've gotten a lot of wonderful ideas. I am working on a traditional southern cornbread dressing made low carb. I'm starting with the Atkins cornbread and the Atkins country white bread. I'll use celery and onions and plenty of butter just like I used to do and wet it down with chicken stock. I'll let you all know how it turns out. Luckily, my sister who doesn't do low carb has agreed to cook all the starchy things and I will cook the vegies and make the salad. Dad does the turkey and makes gravy. He also bakes pies but I am going to make the pumpkin cheese cake. I can hardly wait!!

There is a Pumpkin bread recipe around here somewhere-haven't been able to find it again. Anyway, it called for

5 eggs
1 cup almond flour
1 cup Splenda
etc...

I made it last week and it was good, but eggy and too sweet! I took the splenda down to 1/2 cup, 4 eggs instead of 5 and added 3 oz cream cheese to it. Liked it much better! No aftertaste.

I'm making cornbread stuffing made with Sherris cornbread recipe www.sherrieslowcarbrecipes.com

Just add eggs, celery,onion, turkey juice, maybe a few LC bread chunks if neede. Sage, parsley, thyme, salt and pepperand stuff that bird!

Made the pumpkin bars last night replacing the walnuts with Birdie's pecans. YUMMY! Yes, a tad sweet though. I cut down the splenda to 3/4 cup remembering the comment that they were good but sweet. I didn't account for the sweetened pecans though so it still ended up really sweet! I don't mind at all being a former sugar junkie. Good thing is it makes me only want to eat one because they are so rich. GOOD STUFF!

The countdown is on . . . . . only 3 more days!

Yeah, what are all of you going to do on the big day in terms of counting carbs? Will you count your carbs or just have a "free day" remaining lower carb and low GI? I'm kind of leaning towards a "free day." not so much because I want a license to chow, but more because it will take me the good part of a day to enter all these custom recipes into fitday! I'm lazy, what can I say . . . . .
