Default Breakfast meatballs

Did a search and came up with this today.
Enjoy sound wonderful, but haven't tried as yet.

BREAKFAST MEATBALLS (LOW CARB)


Preheat oven to 350°F

6 lbs ground beef
4 lbs of breakfast sausage
8 eggs
2 cups (approx) of chopped onions
1 cup of green peppers
2 lbs shredded cheddar cheese
dry mustard to taste
minced garlic to taste
salt and pepper to taste
low carb catsup about a cup
cream (amount varies, till it looks like no more will soak into the meat mixture)

Mix well. Make into meatballs.

Bake on cookie sheets or flat pans in the oven at 350°F for about 30 min, but watch them so they don't over cook.

Store in ziploc bags in freezer for 3 mths store in ziploc bags in fridge for a week,

Microwave to heat and enjoy.

Ultimate meaning staple? I'd have to say bacon and heavy cream. Where would I be without either? I couldn't do anything! Next is eggs - hard boiled and chopped in salad, scrambled, crepes with whipped creme, they're used as a stabilizer to cook everything, patties, meatloaves and meatballs, meat dumplings...... Bless the eggs!

Until I starting experimenting with fat fasts etc to ged rid of these last 10 the ultimate staple was beef broccoli from the chinese place across the street. The sweetest crispiest broccoli, no sauce, just oil, and beef. Yum!

homemade bacon bits (cut strips into quarters and cook) with left over chicken (cubed) on a huge bed of romaine and spinach, with Kraft Creamy cucumber dressing!! I eat this almost every day (alternate the chicken with pork, steak, cheese). My kids love this, too!

Also, devilled eggs (never let myself eat them before on LF) and mock danish with extra lemon juice.

There have been a lot of threads on this site for sugar-free jello, and they're all awesome! If you click on the "search" icon on the top here, put in sugar free jello and see what happens. Plenty of ideas/recipes.

Basically take 2 pkts of knox unflavored jello with unsweetened koolaid, add a little splenda and you have your own jello.

I saw the quote on

sugar free jello with cool whip...

I didn't know Cool-whip was healthy. The last time I read the label, it was full of partially hydrogenated oils, trans-fatty oils. Personally I'll stick with pure whip. cream. Annie-Pie

Annie, could you tell me how many cups of water for the packets of gelatin? I can't get a straight answer. I did break down and buy some of the stuff with asparatame in it, for occasional use, but would prefer not to use it. TIA!

I like the reddi-whip plain (gotta try it with splenda)

My newest one...the low carb La tortillas with a little pizza sauce and mozz cheese ...maybe peperoni. put second shelf down from broiler (I have electric stove) and once heated and cheese is melted, enjoy. It takes 4 mins or so to make my dinner now...instead of...is the meat thawed?...is it cooked yet? etc. They are great!!!!!

Mashed "Faux"tatoe Casserole.
Made with cauliflower, sour cream ( or cream cheese), bacon, and cheddar cheese...baked until it is bubbly.

My absolute favorite!

Hey guys, well I'd have to say my favorite low carb food is Low Carb Cheescake!!! My dad and I are both on Atkins and we like to keep this in the house on a regular basis for whenever we feel like having a treat. In case you don't have the recipe, here it is!

2 8oz Packages of Philidelphia Cream Cheese
(has <1 carb per ounce)

2 Tbsp Sour Cream (Walmart has one called Daisy Brand which only has 1 gram of carb. per 2 tablespoons)

3 eggs

1 tblsp vanilla extract

3/4 cup Splenda (or use Stevia for NO carb sweetener!! But be careful, it doesn't take much!! If you use Stevia, add a couple tablespoons of Splenda w/ it to bring out the sweetness. Stevia gets bitter if you use too much!)

For Chocolate cheesecake, add 2 tablespoons of Hershy Cocoa .
(2 carbs per tbsp)

Total Carb count using Splenda: about 44 carbs - 3.5 carbs per slice
Total Carb count using Stevia: 21 - 1.5 carbs per slice

Directions: Soften cream cheese in microwave for about 25 seconds. Add sour cream and mix with a mixer until creamed. Add eggs 1 AT A TIME and mix each one well. Add vanilla. Add sweetener and mix well. If making chocolate, add chocolate.

Poor into greased pan and back at 375 degrees for 15-20 minutes or until cracks appear. Let cool for 10 minutes, then cover and refridgerate.

Enjoy! (great w/ some whipped cream on top!)
