Wow! No, I hadn't seen that yet. Fascinating! Things have changed hugely from even when I was a kid... although that's becoming a big stretch of time now.
I'll look more closely next time but it look like fillets of some dark organ meat and I looked closer and it said, I thought, "cooked pork blood". But you never know, I was pretty sensory overloaded so I might have gotten it wrong.
Ok, I went to the wonderful Asian market today and got some Pork Belly and a whole duck. And let me tell you, they don't mess around. That duck is WHOLE! Still has it's head and feet attached. I hope I can figure out how to gut it and stuff! The feet and head I'll cut off and put in the next poultry stock I make.
