today i went to my folks to have a family get together with my brother and boyfriend.

mom and dad both did their part to make a fajita type thing, so i made:

lettuce base
bunch of grilled shrimp (they also made steak)
grilled onions and peppers
cheddar
fresh guacamole
salsa

yum! and very flexible meal for lots of different tastes- they had wholewheat tortillas, gluten free corn trtillas (my boyfriend is GF but not lowcarb), shrimp AND steak, etc....easy to just let people just pick their own. i will keep this in mind for mixed crowds with diet stuff

Today I had leftover roast beef and broccoli, and some really nice naturally cured genoa salami. Mandarin Orange sparkling water to drink.

A taco salad (minus the shell, of course). I'm sure I'll be paying for it for the next few days with water retention, but it was awesome anyway.

Chicken salad, tomato slices with cheddar cheese, and about 1/2 cup of berries. Great summer food during a heat wave.
