Yesterday I had a small can of sockeye salmon mixed with mayo, a mini cucumber and a stalk of celery, seasoned with curry powder and black pepper as a chunky salad.
Today will be 1 uncured beef hot dog and a wedge of my broccoli cheese casserole.
I made LC Chicken Enchiladas
Oven baked chicken breasts from last night, cut up/shreded, cheddar cheese graded all over the chicken and a scoop of salsa right in the middle, then zapped in the microwave for a minute.
A spoon of sour cream on the side.
A little Avocado would have been good too, but we're out.
Today I ate lunch at Golden Corral. Had cauliflower, broccoli, a chunk of boiled cabbage, a tomato wedge, a tablespoonful of tuna salad, some meat loaf and some pot roast.
