Link to another thread. With only two people in the house, this Taco Casserole was three filling meals. My type of cooking, reheat a slice of casserole, put some Guac on top. http://forum.lowcarber.org/showthread.php?t=480635
Yum, Jey! Thanks for sharing that. I am a fan of the cheeseburger pie, this sounds delish!
I am making a dinner salad tonight with tuna, romaine, grape tomatoes, avocado, shredded Mexican blend cheese, cheese crisps and homemade Ranch.
Well, the salad didn't happen - but I pan-seared and finished in the oven 2 thick pork chops, (no good oil in this house (rancid) so I used bacon grease that I was keeping in the fridge til trash day)
and did a pan-drippings and HC gravy. I ate a few grape tomatoes with it.
Last night was Bacon-wrapped hotdogs stuffed with cheese and dill pickle, LC Mock Raspberry Mojito and a few non LC things, nothing too crazy - no sugar
Last night was oyster shooters (raw oyster in a shooter glass with tobasco and Michelob Ultra) for appetizers. Main course was crab legs and a hamburger patty mixed with a little breakfast sausage cooked on the pellet grill with avocado slices.
appetizer of almonds fried in olive oil with rosemary; pan fried lamb steak (cut from the leg), with a side of fresh green and wax beans, steamed in the microwave and frizzled in the fat left in the pan. I overcooked both the green beans and the lamb by a minute or two longer than my preference, but I dare anybody to say that this wasn't a damn fine meal.
Last night was two bacon cheeseburgers (sans bun, of course) with a fried egg on each. Also had a few slices of tomato, several dill pickles, and a small lettuce salad with blue cheese dressing.
