It's not just vitamins, it's fibre, and all sorts of other useful nutrients.
I'm worried that you are asking about three cups though. As you are now nowhere near Induction, you should be having much more than 3 cups.
How about figuring out ways to enjoy them more? Have a look in our Salads, Vegies and Side Dishes subforum for some good ideas.
