Just wanting to share.....

My newest low carb (ZERO carb actually) discovery.... FRYING CHEESE.... you all probably knew about it, didn't you?? but it's new to me.... and so delicious.... couldn't find Queso Blanco in trips to several stores (still searching), but I did find Queso Panela at our local "Food 4 Less" store, which carries a large assortment of Hispanic cheeses... the Queso Blanco is mentioned first as the best NON-melting cheese, but Panela is right behind it.... just slice into "bars" and throw onto a hot griddle/skillet (I sprayed it lightly with oil) for about 2 mins per side (no coating needed)... it gets a beautiful crust on it, and does NOT melt all over your pan - it keeps it's shape.... it is perfect for a yummy snack or to go with a meal... price is reasonable also... $2.50 here for a 16oz package... quite different than the cheese crisps I am used to making in the microwave.... Poor Ray loved it so much, that we are now on our second package....
