Question LC leftover Magic?

I have kindda run into a roadblock. I have been eating a lot of turkey the past few months. Leftovers generally are either eaten on top of salad, turkey/chicken tacos, not much else. I have done the same with beef/pork roasts..taco meat, gets turned into taco salad, or taco eggs. Any ideas? I am at a loss. I know there has to be ideas to turn leftover protein into things besides turkey/chicken salad. I'm curious, as I have another turkey breast in the fridge from last night.

-Slice it and fry it up in some butter, and have it with fried eggs for breakfast.

-Dice it up, mix in some mayo and celery and onion....yummy turkey salad.

Hmm...I'll let you know if I think of more

Make it into a casserole. Add some cream/sour cream/cream cheese (pick one or more) and a low carb veggie (cauliflower or broccoli seem to work well), and some cheese. Bake until hot and/or the veggies are soft if you like it that way.

Add it to chicken/beef/veggie/seafood broth for a warm soup in the colder months (which you are certainly experiencing right now up there!). You could add some low carb veggies if you like.

Dice it up, add some diced cauliflower and fry it together for a "corned beef hash" type dish. Add seasonings if you like.
