I know we have a new recipe thread coming soon, but, I wanted to share this with everyone now.

I just had the most awesome meal since being on Atkins, now I'm out of induction, howevr, I think it can be reduced for induction maybe, use your imagination.

First I browned a large link of Farmer sausage, from our little butcher shop, he makes them himself, I'm sure any good spicey one would do.

Then I sauted, 1 cup of eggplant, (after it had been salted then rinsed and drained, 1/2 cup Cauliflower,1/4 cup of red pepper. in olive oil and butter, then I sliced the sausage in 1/4 inch slices, and added it to the veggie's added in some basil, oregano, and garlic, tossed around til it was all cooked, then added a few baby whole corn, and 3 tbsp of feta cheese, heated just enough to soften the cheese and warm the corn. AWESOME, I make this for the rest of the family only they get tomato sauce and pasta.

Fitday did not have baby whole corn, but I found it at another site 4 gram 1/2 cup and 1 gr fibre.
