Default Spicy Sausage Stir Fry

This very large recipe-feed my family of 7 two times.

Stir fry:
cook 1 1/2 lb.spicey sausage into crumbles
add oil to electric skillet
add in this order: the amount of veggie may slightly vary but it doesn't matter.
1 medium head chopped cabbage and 1 bunch green onion, 5 stalks chopped celery, 1 c. peanuts, 2 TB chopped garlic and 3 TB ginger
5 mins later- add
2 c. broccoli, 2 c. sliced red peppers, 1 c. green peppers
1/2 c. squash (mostly for color)
Stir veggies until slightly softer.
5 mins later-
add 3 TB peanut butter
melt in the middle of skillet and stir in
season with ground red pepper and splenda (about 1/2 c.) (To your taste), again keep stirring (frying, if you will)
mix 1/1/2 c water with 1/2 c soy sauce, and add to veggies
sprinkle with xantham gum to thicken, simmer until thick

The carb count will vary depending on which veggies you use, the sweetener amount, and the peanut butter you use. I don't use total carb count, but net carbs instead, so I find this recipe only depends on the veggies and peanut butter. It's very lc for such a very large dish.
