Default Cheezy Sweet Pepper Snack-- for sweets cravings

1. Get driven to distraction by cravings for sweets on your third day of Atkins induction.

2. Slice sweet pepper in half (red, yellow, or orange), scoop out seeds, and wrap on half up and put back in fridge.

3. Set remaining half on a plate, open side up, like a little bowl.

4. Cut some pieces of monteray jack cheese, about 2 ounces, and put in little pepper bowl.

5. Zap in microwave for 35 seconds, until cheese is melty. Enjoy.

That's half of your daily cheese regimen, and about a half cup to one cup of salad veggies, but it's sweet and juicy, and very nice, less than 5 grams carbs. It was so sweet, I had to check and make sure I wasn't overdoing it.

Not a super fancy recipe, but I'm not a super fancy cook. And I wanted to share.

This sounds yummy! some variations you could do are different flavours of cheese (I'm thinkin' jalepeno jack?), also cream cheese?, maybe bake under broiler, too, if you have extra time.

Thanks for the idea -- never would have thought of this!

A tasty variation, take the bell pepper and cut 3-4 shallow silces to create a 'bowl' that resembles a 'stuffed potato appetizer' shell. put the cheese with a little onion and cooked bacon in. Cook in the microwave and then top with some sour cream. A replacement for "tater skins"!
