Default No Bake LC Key Lime Cheesecake

Okay, my last post for today here, promise!

This is another great one I tried this weekend from LC and Lovin it.

It tastes very similar to Key Lime, but next time I may reduce the splenda a bit.

Hey there. I make mine alittle different. Has about 2g carbs (total). Basically it is as follows:

1 sm. pkg. SF lime jello
1-1.5 8oz. packages cream cheese
heavy cream (about 1/2 cup) whipped stiff
4-6 pkgs splenda, or none, it's to your taste
Grated lime zest (about 1/2-3/4 lime)

Directions:
boil 1/4 cup water and add jello mix, add another 3/4 cup and place in fridge to cool but not stiffen. In the mean time dump your cream cheese into your kitchen aid bowl and beat until soft and smooth. slowly pour in the jello and beat to incorporate. Switch bowls and pour the heavy cream into it and transfer to the whisk attachment, add the splenda and lime zest to cream and whip until stiff. Fold into the lime cream cheese mix. Butter a pie pan (you can add some wheat germ to the pan for a light crust but it adds carbs) pour in the mix and stick it into the fridge until stiff. Serve. You can also freeze it for about an hour and add more sweetened whipped cream to the top.

Thanks alot!! I really like it too. I like to stick them in the freezer so they get super cold and alittle more stiff.
