Any ideas on how to make a LC spring roll wrapper? or egg roll wrapper? something that won't break up in the deep fryer. My new favorite food is Thai shrimp rolls and would love to learn an LC alternative.

You can use tofu skin.

Depending on where you live and how big a tofu eating population there is, you can get fresh - big population - or dried - small population.

The dried has to be softened in water and dried thoroughly before using and the fresh can be used as is. It won't get as crispy as something that is grain based but it'll do.
