We bought half a pig early in the year and have finished it. Yesterday we bought a loin from Costco. Yes, it had fat *on* it but the meat itself is far too lean.

I had the hardest time finding a pork shoulder or pork butt this weekend. I had to get a pork loin, but it was pretty lean. I remember the fatty steaks too.

Loins are always lean. You need a pork butt or shoulder if you want a fattier cut.

The loin from the half pig was not super lean. Neither are the loin chops I buy locally.
