Guys I'm sorry I haven't gotten back to you on this. I am trying so hard to find the carb count. Honestly I really don't care because they are so darn good for you. Some things I'm not so stringent on. I promise I will keep looking. xoxoxox

Thanks for posting the question in the recipes forum.

Can you get white sweet potatoes/yams in Arizona? I have no clue what's available where. My family's from PA and even though we're just an hour away in NJ, most people here have no clue what a white meat sweet potato is.

For Delicata squash, 1 cup cooked squash is 9.33 grams carbohydrate and 1.33 grams fiber, 0 fat, 1.33 grams protein and 40 calories.

I'm stumped on the yam. Don't know what a white yam is!

I too, have never heard of white yam/sweet potatoe. We only have the golden and ruby yam/sweetpotatoe. This white yam may to an heirloom variety. Can you get more info on your end?

By the way, is that your real last name? Just wondering because my maiden name was

BGMAMA-Your recipe sounds wonderful. I am going to have to find this squash!!!My friends kids call their grandma Big Mama (because she rules the roost . I think it is cute!!!

The white meat sweet potatoes are the only kind we ever had when I was growing up. They spoil (get moldy) easily so I guess that's why they've never made it big time. The regular grocery stores in eastern PA all carry them in the fall/early winter but I've never seen them anywhere else except farmers markets. If you ever see them, pick up a few and try them. They're wonderful. They look just like yams but are a little thinner and smaller on average. If you scrape the skin a bit you will see white instead of orange. Then you'll know you have the real thing.

Fitznoski is a combination of DH's last name and mine. He's a Fitzgerald and I'm a Janoski. I never changed my name when we got married (neither did he by the way). When I was pregnant with # 1 (way back in '79), we both worked at Prudential. When it came time for the baby pool, it was named the Fitznoski Baby Pool. We liked the sound of it and have used it over the years - at the vets, for email and when sending cards to friends. We considered Jangerald but it sounded too upper crust for us.

You're probably talking about butternut squash...Mastercook says 16 carbs, 2 fiber in 1 cup

Thanks for posting this, but it's still too confusing to me, because Delicatas can be anywhere from 5" long to 10" long, just depending on their growing conditions.

I just dicovered spaghetti squash last night and what a treat. when you pull the meat out with a fork, it comes out just like spaghetti. i then put it on my plate, covered with shredded cheese and about 1/2 cup of hamburg goulash sauce made with tomatoes, peppers, onions, garlic and meat and then broiled it a few minutes. It not only tasted good but made my brain feel not so deprived while the rest of the family ate regular goulash with elbows. Great dish!

Try it with a little heavy cream, fresh thyme, salt and pepper.

Doesn't matter how long the squash is.. the carb count is for one cup cooked squash!

And I am doing the *HAPPY DANCE* I FOUND delicata squash at Safeway!!
