where can i find this in the uk? is this ok to eat on LC? ive seen it in many LC recipies and wondered if it was ok to eat...

annasophia, xanthan gum is fine to use on low-carb as a thickener. It can be found in the "free-from" zone at Tesco (ie where they have the glutenfree stuff).

I don't count any carbs for xanthan gum. Its pure soluble fibre.

Okay thanks! That is good to know. I am thinking of making some instant pudding with xanthan gum, guar gum, whipping cream, water, cocoa powder and stevia. Hope it works!
