Default Cajun Pizza?

Based upon the many suggestions and pizza recipes contained in the forum, I've experimented off and on with one of my favorite food groups: Pizza! To cut carbs, I decided not to use tomato sauce (sigh!).

Essentially, I shred any left over cooked meat of the day, and build an 'upside down pizza' in a large fry pan using onion, bell pepper, mushrooms, black olives, and of course garlic. I simmer the mixture for a while before adding generous amounts of mozzarella plus other cheeses, allow the cheese to melt, then remove from heat and cool the point where it is sliceable. A very quick meal!

On a whim, I added a sprinkling of "Louisiana Fish Fry" brand Cajun seasoning to the mixture prior to the layer of cheeses, and I have to say it turned out absolutely delicious, and have used it ever since!

Has anyone else tried this?

This sounds yummy. Think I'll try it this weekend.

ps..I have found a brand of tomato sause that is really low in carbs. Unico Original Pasta Sauce. I don't know if you have that brand in the US. It has 6.2 carbs for 1/2 cup compared to 11-14 for other brands like Prego etc. It comes in a can, and is a pretty basic pasta sauce. It's worth a check in the bottom shelf of the tomato sauces where the lower end plain old plain old brands sit.

For LC purists, it does list sugar and cornstarch in the ingredients.

For me..the modified purist, with the small amounts of it I'd be using, I allow myself those no-no's

I have been reading/ writing down these wonderful sounding snacks....Boy you should see my grocery store list....No even funny...(LOL) I may have to get a 2nd job..lol Thanks for the awesome recipes ~-----^-----
