My mom had that cookbook, and I came across it in a used bookstore when I started this thread; I immediately bought it. Peg had a lovely sense of humor.

Had a Peg Bracken special tonight for dinner:

Salad of arugula, raw mushroom, green onion, with tarragon vinegar, olive oil, s&p; Hormel Beef pot roast au jus - this was really, really tasty.

The Hormel labelling says 3g carb per serving, and the box has 3.5 servings, but I think that these carbs are mostly in the “au jus” and I didn’t use that much of that, there’s so much of it that you could make beef dip sandwiches (if you were eating bread, which I’m not). I think I ate just over one “serving” .

I spent about 5 minutes making my salad, and didn't have to cook the roast!

Smorgasbord or Antipasto? You Decide!

One of my favorite meals these days is a composed cold plate. It's good for any meal, particularly now that it's summer. If your goal is to stay out of the kitchen, smorgasbord is the way to go!


Tonight's Dinner:

sliced peppered turkey breast (Columbus, from the deli)
1 small red pepper, sliced
1 small Persian cucumber, sliced
6 green olives
1/3 C parsley salad (mine was Tabbouli, had about 1 Tbs bulgur, from the deli)
Eggplant-Tahini dip (Baby Ganouj) for dipping (from the deli, but also comes canned)

I spent about 5 minutes slicing the cucumber and pepper. No cooking involved!

Last night: Lamb chops (pre-cooked, from Trader Joe); parsley salad (from deli counter at the market); eggplant caviar (from a jar).

hahahahaha no cooking for ME! ;0

Peg would approve, I'm sure.
