Karen, I just had to thank you for this recipe- my boyfriend adores it! He really missed mashed potatoes when he started low carbing, & now he prefers these! I've taught him to make it too- not a bad feat considering he previously only warmed up takeaway food! I've tried a few others too, but this one is his favourite- also, it's the one thing that I cook better than his mum! (do we have a 'smilie' for 'smug grin'??!!)
