Shortbread
I just made this using the base recipe from Larousse Gastronomique, - I modified it to low carb. This recipe makes 30 cookies. Works out to be between 8-9 g carb per shortbread cookie.
Low Carb Shortbread Cookies
1 cup cornstarch
1 cup flour (use either stone ground white or rice flour)
1 cup almond flour (I grind my almonds in a coffee grinder)
1 cup butter melted
2 egg whites
1/4 cup splenda
1/2 tsp salt
Blend all ingredients. Roll into 30 balls, place on greased baking pan. Press slightly to flatten a little. Bake at 275 F for 50 minutes. Cool on rack.
