Ingredients: 120g butter, 22g splenda, 1 teaspoon manuka honey (optional), 100g Carbalose flour, 40g almond flour, 20g soya flour, 1 teaspoon baking powder, cinnamon, nutmeg, ginger (about a teaspoon of each), zest of an orange, zest of a lemon, juice of half the orange (optional), an egg, and 100g mixed raisins (optional, can be switched for berries, nuts or sugar-free chocolate), 1 teapsoon vanilla extract.
Preheat the oven to 180 degrees.
First cream the butter and sugar (and honey), then add the egg and a couple of tablespoons of flour (I mixed the 3 flours together) and mix. Then add the spices, raisins, vanilla, baking powder, zest, juice and the rest of the flour and fold in. Roll into balls and then press down to make into cookies - making 10 large cookies. Bake for 15-20 mins.
I think they taste best warm - cut in half, with butter - like you would with a hot cross bun. Or with sugar-free jam and cream, like a scone!
