Thanks Cleo, I will give that a go. I just tried them cold and I have to say, they taste a lot better...not great but definitely better. I'll let you know how the others turn out.
I am a fan of making sample sizes of things, especially when you're not sure if you'll like it. On the plus side, the oopsies you don't like you can dry out and make into bread crumbs for any low-carb 'breaded recipes'. I made meatballs with oopsie crumbs in place of bread crumbs a week ago.

I just made my 2nd batch of oopsie rolls yesterday. Oh the possibilities! I made a grilled cheese with 2 of them and it was almost like the old days. LOL!
I followed someones advice here and baked the recent batch for much longer. I'd say an hour? It helped make them less foamy and less eggy tasting. I'm sure some people like the eggy taste, but I eat so many eggs already, I'd like to enjoy my oopsie creations without the egginess.

Bread crumbs...I keep burning my Oopsies to my pan, but the wonderful crumbs that I scrape off I've used as bread crumbs. This last time I spread a thin sheet with Oopsie and scrapped them all off as bread crumbs! I never thought to over cook them and then grind up the Oopsie!
