Default Chicken Salad

4 boneless chicken breasts (cooked and cut up)
1 c mayonaise
1/4 c chopped celery
1 t onion powder
salt and pepper

Mix all ingredients together!!! So simple and oh so good!!!

Thumbs up Agree on the chicken salad

Chicken salad is a staple for me. I add a little broccoli for some extra crunch. I will roast a whole chicken and use what is leftover from dinner ( usually 1 breast, 1 drumstick, wings and carcas meat). My basic recipe is;

Leftover chicken meat, cubed 0 carbs
1/2 cup diced celery 2.2 carbs
1/2 cup broccoli florets 2.3 carbs
1/2 cup mayo 0 carbs
2 or 3 tblsp. sour cream 1.5 carbs
1/2 tsp. garlic pepper
1/2 tsp. onion powder
salt to taste

This makes a great snack or lunch. I often roll it up in romaine lettuce leaves and I have even used it as filling for a roast beef roll-up.

To me, it is filling and satisfying with hardly any carbs.

I have also done this recipe using left over roast beef.

Thank you all so much! I never thought of chicken salad, I was thinking maybee of adding strawberries that would be good I will try your recipes.

I buy the canned chicken from Costco and make this all the time.
