I've been eating moose and caribou for years, but we always boiled up the bones for the sled dogs. I finally figured out (duh) with my new WOE that the dogs do not need the bone broth, I do! The taste is intense and I add a lot salt, but I know it must be good for me. Not to mention local, organic, and the right price.
