Can anyone tell me why when veggies are cooked the carb count goes up. I thought I had hid a gold mine when I read the label on broccoli which has 3 gms of carbs per one cup with 2 gms fiber, but according to an Atkins book I have 1/2 cup cooked broccoli is 4.3 carbs. Doesn't seem fair.
