I do not make my own Korean food, but here are some tips for eating in restaurants that may help you adjust your home recipes or consider which recipes work best with low carb.

and if you widen the search to the broader "Asian Food" category, you will likely find many recipes and suggestions for substitutes for rice and noodles. There are noodle substitutes in the US markets, made with tofu and glucomannan shirataki, or you can make "rice" from cauliflower:
