I have made the chicken fried 'rice' cauli for friends over for dinner twice in the past.
They ate theirs, plus leftovers, plus what I'd planned to save. And they were blown away when I told them it wasn't really rice.
The chicken-fried-rice version is ridiculously good. I could just eat this stuff as a meal regularly with chicken chunks in it.
Soy sauce has some carbs though you don't use a ton. Most brands have gluten which is why I quit eating it. I just found a soy sauce that doesn't a few weeks ago.
