For each egg, you can use one of the following: - 1 tablespoon ground flaxseed mixed with 3 tablespoons water
- 1/4 cup of soft tofu
- 1/4 teaspoon xanthan gum – if you add this to 1/4 cup of water and let it stand. it will thicken and can be whipped like an egg white.
