Another cauliflower option: Faux potato salad. I took my grandma's potato salad recipe and tweaked it for LC. It takes a little bit of work, but my family likes it a lot (even the carbivores ). They insist that I make it for every holiday meal. I plugged the recipe into MY PLAN here on this forum. Here is the link:
