Leezurd, the best bet unless you actually have documented allergies/sensitivities is to choose from all of the proteins that you are willing to eat with moderation in mind. Don't rely on any one thing to be your sole protein source, or provide more than 25% of your protein. That said, if you're NOT sensitive to wheat, and you don't have any digestive issues after eating wheat gluten/seitan, then enjoy!
