Mine were flakey and easily crumbled; I don't think they'd work well with a sour cream-type dip. Though I've read that they're often served in Asian restaurants as an appetizer and I'd guess they use a soy sauce dip (e.g., soy sauce, ginger, a little vinegar or fish sauce) that would probably work well. I'm going to keep experimenting though, making another batch today! Do a search for "kale chips," there are a lot of posts and recipes online.
