I made some awesome pesto in the fall, if I do say so myself, out of the two big basil plants from my garden. I froze it in ice cube trays and stored the cubes in plastic containers in the freezer. It was so handy when I couldn't think of what to do with plain meat, fish, spaghetti squash, or other veggies. (Or pasta, if you cook for a non-LCer like I do.)
I used the last of the pesto in December, and mourned. This year, I'm going to plant a ton of basil so I can have way more pesto to store.
...but I must have tossed the recipe.  I was going to post it, but I can't find it. Oh well. |
