I was the cook for Thanksgiving, so those at table (hubby & brother) got to eat what I cooked. Highest carb (before dessert) were the parsnips and carrots in the cauli mash. Roast duck, gravy (reduced, not thickened with flour), Brussel sprouts, roast carrots, broccoli slaw, savory cranberry sauce, a couple of corn muffins out of the freezer for the guys; and, of course, the veg mash. A smoked salmon appetizer with cream cheese. They both said they felt pleasantly full, not "stuffed". They even opted to wait till Friday for my brother's really excellent tiramisu. No doubt it was easier as there were so few at table, but I felt quite pleased with the whole event. Scale shows little damage. Both guys know, and appreciate, what I am doing, and my success, though neither cares to emulate me. Hubby should, but won't. Brother is not 100% healthy, but skinny, so sees no need.
