If you crave more and more cream (or other dairy) and find it hard to restrict it to <4T/day, you likely have a sensitivity to dairy protein (casein) and are experiencing the resulting casomorphin effect. Instead of cream, at home I use 1 teaspoon of butter (mostly fat, minimal protein/milk solids) in my 10-oz mug of coffee and no longer worry about cream going bad before finishing the carton. I do use an occasional real-cream vial in my coffee when eating out with no problems, but cannot keep dairy, including yogurt & cheese, in the house.
