I know this is an old thread ... but I came up with a yummy cookie recipe. It was so good that even my non Paleo friends LOVED them. They are great with my morning cup of tea. Hubby didn't like that they don't dip in his milk like regular cookies ... though as we Paleos wouldn't normally drink a big glass of milk, I don't see this as a problem.

Almond, Hazelnut choc chip cookies

2 cups of almond flour
1 cup almond butter (Costco)
2 eggs
1 cup hazelnut flour (grind your own)
3 tbsp coconut oil
1/3 cup honey
cinnamon
2 chunks of dark cooking chocolate roughly chopped
coconut milk (add to correct consistency - roughly 1/3 cup)

Preheat oven to 180c or 350f

Blend hazelnuts in coffee grinder or blender.
Mix all ingredients adding coconut milk last to consistency like cookie batter rather than dry muesli bars.
Spoon mixture onto baking tray and bake for 15 mins or until brown on the outside.

Are still edible if slightly burnt looking on the outside. I am still experimenting with temps and cooking times, wondering if I can lower the baking temp ... wasn't a serious baker before converting to the Paleo plan, so not sure if that would work.
Made a lot of cookies.
