Pumpkin custard is great too. Eggs, cream, pumpkin, sweetener, spices and bake in a water bath.

I've seen small pie pumpkins hollowed out and baked with a savory meat filling. They would be great baked without the filling and used as an edible bowl for a soup or beef stew.
