I made a very similar recipe this morning except it was 2 cups of flax meal, 1/2 cup melted coconut oil, 1/2 cup of DaVinci, 1 teaspoon each of the baking powder and soda, and the spices. I added 1 cup of chopped walnuts, but I still only got 10 muffins. They are very good, but now I'm wondering how do you make pumpkin butter? That sounds like it would be perfect with these.
