cream together 3/4 cup coconut oil, 2 eggs, and 1/4 cup honey
add:
1 cup unsweetened coconut flakes
1 tsp baking soda
1/2 tsp salt
1/2 tsp vanilla
2 cups ground almonds
bake at 350 for 14 minutes. no need to grease the pan
macaroons
----------
4 egg whites
1/4 tsp cream of tartar
1/3 cup honey or agave nectar
1/4 tsp stevia powder or 8 drops stevia extract
1 tsp vanilla
1 1/3 cups unsweetened coconut flakes, shredded finely in the food processor
beat egg whites until frothy. add the cream of tartar and beat until stiff peaks form
reduce mixer speed to low and add the honey/agave, stevia, and vanilla
fold in the coconut flakes
drop spoonfuls onto a greased cookie sheet and bake at 300 for 18-20 min
and I'll throw this in for sh!ts and giggles:
coconut ice cream

2 cups coconut milk
1 cup water
4 eggs
1 tsp vanilla
pinch of salt
heat the coconut milk and water until steaming but not boiling
in a bowl, beat together 2 of the whole eggs plus 2 egg yolks (can save the whites for macaroons!). add the vanilla and salt. put over a double boiler
slowly add the coconut milk/water mixture and heat all over the double boiler til it gets thick
let the mixture cool, and put in an ice cream maker. alternatively, beat the mixture in a food processor and let it freeze for a little while, then beat it again. freeze until set. let stand 10 min on the counter to soften before eating.
