Default Mock apple pork chops

This only turned out so-so, but I am betting with the creative minds on here, someone can take the idea and run with it.

First I peeled and seeded about 5-6 medium zucchini. I chopped them roughly, like called for in the mock apple cobbler recipe. It came out to about 2-3 cups chopped zucchini.

Next, I browned 4 pork chops in my large skillet. After the pork chops were browned I removed them to a different plate. In the skillet I put in the diced zucchini, about 1.5 tbsp lemon juice, and 2 tbsp butter. I cooked this mix until the zucchini was softened. Then I added cinnimon, nutmeg, 4 splenda packets, and 2 sweet & low packets. This looked like too little too dry, so I added about 1/4 cup water (some LC apple juice or cider would of been better, but I didn't have any).

I stirred the zucchini mixture up, then added the pork chops back in. Turned the heat to low and simmered about half an hour more turning once.



Now the apple part turned out great, but I really didn't feel the pork absorbed enough of the taste. Some ideas I had for improving could of been

1. Marrinate the pork chops in LC apple cider
2. Do a dry rub on the pork with cinnimon and sweetner first
3. Don't brown the pork first and cook a heck of alot longer on low.

I'm sure others on here who have made pork with real apples may have some helpful suggestions.

edit: my daughter is going nuts for the "apples". This could be a good way to sneak some veggies into kids who think anytthing green is suspect.
