Today’s shopping finds….not that great but for where I live great.

I visited our local IGA, (it’s across town and I tend to never go there), and low and behold they had Bob’s Vital Wheat Gluten Flour. I had phoned one day about a month ago to ask if they carried this product. The manager was super nice and told me he’d ask the salesman and let me know. He did get the product in, but didn’t call me. Check the price of this one though!!!!! Are you ready?? 9.99 for a bag 623 g. I hated not to buy it when I had been the one asking, so I’m going to give Gabi’s Bread another go. I can’t believe this could be that much more “vital”! than one we can get in the Bulk Barn for a quarter of the price. Does prove though, some manager’s are interested in our wants. I also found Soft Tofu, the only grocery store in town to carry. When I was there I picked up a jar of Spaghetti Sauce (Ragu), no sugar added (12 carbs to half cup).

Tonight I’m making the following recipe (I haven’t tried it yet).

Meat Cabbage Casserole

1 lb. ground beef
1 very small onion (chopped)
3 cups finely shredded cabbage (about ½ head)
1 cup finely shredded carrots (about 2 carrots)
1 tsp salt
pepper
16 oz. spaghetti sauce (Ragu is the lowest in carbs I’ve found)
1 tbsp. worchestershire sauce
½ cup shredded cheddar cheese

Brown ground beef and onion, drain. In a 2-qt. Casserole dish layer carrots and half the cabbage. Sprinkle with salt and pepper. Add meat mixture and press down. Add remaining cabbage. To spaghetti sauce add worchestershire sauce. Pour over top of casserole. Bake at 350 for 55 minutes. Add cheese on the top. Bake uncovered 5 minutes. Makes 4 huge servings or 6 normal size servings.

Personally, I’m cutting back on the amounts a little, especially the spaghetti sauce to keep the carbs lower.

For Dessert!!

Sugar Free Chocolate Mousse to DIE for!!! (from Hold the Toast)

1 pkg. Sugar free instant pudding mix (40 gram)
1 pkg. (about 10 oz.) soft tofu
1 heaping tablespoon unsweetened cocoa powder
1/4 to 1/2 teaspoon instant coffee crystals (more if you like mocha)
8 to 12 ounces heavy whipping cream, chilled.

Using an electric mixer, beat first four ingredients until very smooth. In a separate bow, whip the cream until just about stiff. Turn the mixer to the lowest setting, blend in the pudding/tofu mixture, and turn off the mixer, if you overbeat you’ll get chocolate butter.

Hi Sharon, looks like you'll be busy today! :p

Next on my list is a test/review of a generic bulk type wheat gluten to verify for myself if they work just as good as Bob's Red Mills. I tend to agree with Doreen when she said any wheat gluten with 70% protein should do.
