Roasted Vegetables Tacos
 

This is pretty good, even though i don't like veggies that much.

Roasted Vegetables
Heat oven to 450 degrees. Slice yellow squash or zucchini, red &/or green pepper. Mix in big bowl with olive oil. Season with salt and pepper and spices of your choice. Place on cookie sheet in single layer. Bake about 30 mins turning once or twice.
Meanwhile, slice onion about 1/4" thick. Put olive oil & S&P on one side, place on another cookie sheet and drizzle more oil, S&P and bake about 30 mins.

Take some cheddar cheese, melt it in frying pan or oven til crispy. Use it as a taco shell for the veggies. YUMMMY :D
