Is eating like this dangerous?

So I decided to make keto extremely simple, maybe too simple? What I eat now is boneless pork chops, spinach, with a liberal amount of butter. Probably 2-3 tablespoons of butter. And I drink only water. Thats it. Spinach has 1 carb per 100 grams. I'm not sure how many carbs I'm eating a day but its probably less than 5 since I doubt I'm eating over 500 grams of spinach. My question is at 5 carbs is this carb count too low? And I running the risk of any issues because of eating this way? Should I add a multivitamin?

Just for reference When I went from 310 pounds to 210 pounds in under a year, I ate as much shredded cheddar cheese as I wanted, I drank as much diet soda as I wanted, and I used sugar free bbq sauce that had about 2-3 carbs per serving. So the thinking behind removing all those things is maybe I can lose weight faster. My only concern is maybe the carb count is dangerously low? If there is such a thing and if I need a multivitamin or not. I have had blood work done within the past year and it all came back normal. So maybe I don't need a multivitamin? Anything else I should know about eating such a simple extremely low carb way of eating?

Edit: I will also explain as to why I am doing this. I did go from 310-210 pounds but once I hit 210 I eventually gained 10 pounds eating the same way that allowed me to lose the 100 pounds. Confused and having a vacation in houston for a few weeks I just went all out and ate out everyday. Gained about 20 pounds from that trip. Then I would keep yoyoing from keto to high carb from then to now. The trip was a year ago. So I just weighed myself in at 246 pounds. I was 260 pounds a month ago. I'm doing this extreme version of keto so I can hopefully not stall as much and really hit that 160 goal. Because I dont think I can if I eat a bunch of cheese, diet soda, and sugar free bbq sauce.

A multivite is always a good thing. Most soils are depleted. Which is also why eating a varity of foods from different areas is a good thing.

Eat the number of carbs that gets the results you want. Some people can eat zero carbs, others need closer to 20 to drop weight.

The Atkins program wants people to eat as much vegies as possible without gaining, and initally of course, loosing. He lists a big variety to encourage eating a variety.

Perhaps just get back on the wagon and slowly move thost last few pounds. You will arrive at maintenance weight and diet armed with the knowledge to stay there. Loosing the last few pounds FAST is a thrilling thought, however, you have seen how easy the pounds regain.

Keeping the pounds off at maintenance required MORE vigilance than dropping the extra pounds.

Arriving SLOWLY to your goal weight will be your best plan to keep this weight off FOREVA'.....

Yo-yoing is hard... I hope you can avoid this. You have done so well, incredibly well so far.

Yes, I recommend varying your food sources - instead of only pork chops & spinach. Maybe have some eggs, beef, chicken, shrimp...? A variety of greens?
