wonderful strawberry ice cream!
 

I've had lots of LC recipe disasters, so this was a very pleasant surprise!


one cup heavy cream or plain carb countdown milk
2 cups frozen roughly chopped strawberries
one half cup granular xylitol


add ingredients in order listed to a vitamix blender - process on high for approx. 90 seconds.

eat immediately. tastes like regular soft serve :)

Vitamix instructions indicate you can put the remaining ice cream in the freezer, then remove one hour later to stir to break up the ice crystals.

You then can store in the freezer for up to a week.

I'm guessing this can also be made in a food processor if you don't own a Vitamix.
