Breakfast casserole
I threw this together this morning because I was tired of the same old scrambled eggs and meat thing.
Breakfast Casserole. 1/2 # sausage, browned and drained 1/4 cup chopped onion 5 slices bacon, cooked crisp and cooled so you can break it up 4 mushrooms sliced or 'chunked' 2-3 cups shredded cheddar cheese 8 eggs, beaten 1/2 cup cream 1/2 tsp garlic powder salt and pepper to taste Mix sausage, onion, bacon & mushrooms together and placed in bottom of a glass casserole dish. Spread cheese over top of mixture. Mix eggs, cream, garlic powder, salt & pepper well. Pour evenly over the casserole, making sure its evenly distributed. Place in 325 oven for 45-50 minutes (time varies by the container and your oven) All sorts of possibilities for experimentation here -- ham, peppers, different kinds of cheese, ect ect ect..... |

would something like this be good if cooked and then frozen? I work 2 jobs and i am always on the run something i could grab and go with would be great i have tiny fridge and microwave at my day job. and anything that i can make multiple servings of would work great.

That muffin tin is a great idea, I have small kids and they would love that in the morning! Fast Breakfast on the go!

It was delicious! I put bacon, pork chop, green chilies, left over steamed broccoli & cauliflower, mushrooms, onion... omg it was divine! All topped with melted cheese... Thanks for the tip!

I did make this for Thanksgiving morning - I was hoping to have some leftovers to eat tomorrow and managed to salvage just a little square! My family demolished this - it was great!

"casserole" isn't the word I'd put on it -- not sure if it sounds more like an omelette or a frittata.

I make a similar one with jalepenos~, taco meat or chorizo, crumble cheese, avocado, salsa, onions, your right the possibilities are endless:)
