Ok, I just want to list all the recipes I am trying out, and creating myself along the way, and wasn't really sure where to list them, that could be easily accessible rather than scouring my journal...so I am going to start this thread.

I welcome comments, additions, suggestions, and recipes!

Dawn’s Apple Cinnamon Muffins
 
I made a recipe this morning.. I hope I am not reinventing the wheel, and this is somewhere.. LOL! But it was yummy and a nice change for me.. my first muffin since beginning to l/c!

Dawn’s Apple Cinnamon Muffins

½ cup Atkins bake mix
2 scoops keto apple cinnamon hot cereal mix
2 large eggs
½ cup Water
½ cup Half & Half
2 tsp baking soda
¼ tsp Vanilla imitation extract
¼ tsp cinnamon
2 Packets Splenda
Servings: 8 Medium or 6 Large

Mix ingredients, lightly greased or ungreased muffin pan ( I did both, they both worked fine, I didn’t try it w/paper liner) Bake ~350 for 12-15 minutes. Let cool 5 minutes; serve w/ your favorite L/c topping!

Cinnamon Cream Cheese Spread
 
Cinnamon Cream Cheese Spread

1 tbsp cream cheese
1 tbsp butter-softened
1 packet splenda
1 tsp cinnamon

Blend well, spread generously on Low carb bread. I use Arnold L/c Multi grain bread. Doesnt affect my blood sugar levels at all!

Teriyaki Chicken Crispy Chicken
 
Dawn’s L/C Teriyaki Chicken Crispy Chicken

Ingredients:

4 3-0z chicken breasts, skinless

¼ cup Carb Options Teriyaki sauce
1 Lg Egg
¼ cup Heavy Cream (unsweetened)

Whisk in a bowl, Place chicken in the bowl and coat and drip off excess.

1-ounce Pork rinds, finely crushed
¼ cup Parmesan Cheese
S/P/Garlic spices

Put all ingredients in a zip lock baggie and shake until mixed. Place one piece of chicken in the bag, close, shake, then remove gently.

Fry, bake or broil. I fried using Enova oil. Delicious and crispy.

Cabbage Manicotti
 
Cabbage Manicotti

**cabbage leaves
**small container ricotta cheese
**one egg, salt pepper parsley
**spaghetti sauce however you make it
**low fat part skim mozzarella cheese

I fixed my spag sauce first and had it going on the back burner; then I mixed the ricotta, egg and spices and put that bowl in the frig.

Blanch the cabbage leaves (boil for a few minutes) then drain and set the leaves on a couple paper towels while they cool and drain some more. I cut the large veins out. Made it easier to roll.

Pat the leaves with a paper towel first then put a spoonful (more or less) of the ricotta on a cabbage and roll as best as you can. These are small rolls prolly half the size of a manicotti noodle! I put these rolls on a plate, which I put in the frig while the sauce cooked some more.

When all is ready, I added some spag sauce to the baking dish. I added 12 cheese stuffed cabbage rolls, topped with about 3 ladles of sauce, and finally topped with the mozzarella cheese.

I covered the dish and baked it for an hour. It wouldn't take much since the cabbage was semi cooked and they were not very large rolls.

This was good! It also can be made layered like lasagna if you didn't want to make cabbage rolls.

I just read that if you add some splenda to the boiling water that it will also remove some of the bitterness that cabbage can have. I also have added sweet italian sausage.

I havent configured the nutritional values for this recipe yet.

Dawn’s Turkey Bacon Cheeseburger Quiche
 


DAWN’S TURKEY BACON CHEESEBURGER QUICHE

(adapted from a hamburger l/c recipe found online)

SERVES 8

1.25 lbs ground turkey (20 oz)
2 tbsp. Dehydrated onions
6 slices turkey bacon, chopped
6 eggs 4 oz mushroom pcs.
1 cup mayonnaise
1 cup heavy cream
8 ounces shredded cheddar or Swiss cheese
1/4 teaspoon garlic powder
Salt and pepper, to taste

Brown the burger with the onion and bacon; drain fat. Season to taste. Spread in a 13 x 9 pan. Whisk all remaining ingredients except the cheese. Mix about 1/3 of the cheese into the burger mixture and arrange the rest over the meat. Pour custard over the cheese. Bake at 350º for 45 minutes or until a knife inserted in the center comes out clean. Let stand 15 minutes before cutting.

Sopapilla's
 
The other day, I used the cabbage manicotti recipe and made lasagna. It was filling and delicious. I added a packet of splenda to the boiling water while I blanched the leaves, removed the 'bitter' taste that some leaves can have.

Here is a yummy recipe that Happygirl shared with me. I only used a tsp of butter on mine, and it was delicious. Oh, and the brand that I found at walmart was called Mission, and found them on a different endcap over in the deli section all by themselves! I am enjoying the wheat ones, and they only have 5 NET carbs.($2.18 pkg)




Sopapilla's

1 Low Carb Soft Tortilla/fajita shell
Skillet with 1 inch of hot oil
1 tablespoon butter
cinnamon and splenda to taste

Place the tortilla in the oil for a moment and when it bubbles up turn and cook for another moment on other side. One done...drain oil and place on plate...Put tbsp of butter on top...move it around so that it melts all over the top...Then sprinkle the cinnamon/splenda mixture on top.

I used a good bit of cinnamon so that I wouldn't have the after taste of the splenda. These were so great...I can't wait to have more tomorrow. I used the low carb shells from wal-mart (Name-Mama Lupe's, cost 2.24/pk).

I named these Sopapilla's because thats what my friend said they taste like and I have never tried them. To me they tasted like a really good piece of cinnamon toast but better.

Cauliflower Beef Shepherd Bake
 
Cauliflower Beef Shepherd Bake

2 Bags Frozen Cauliflower, boiled until soft and mashed
2 tbsp butter
1 Cup Cream Cheese (I used ½ c. regular cream cheese and ½ cup Philly chives and onions flavored cream cheese)
3/4 Cup Sour Cream
1.5 lb hamburger browned, grease drained
½ c. shredded cheddar cheese

Onion, Garlic, Spices etc. to taste

Mix all ingredients, pour into 8x10 casserole dish sprinkle with shredded cheese. Bake at 350 until bubbly, about 40-45 minutes.

Serves 8

Tofu Mac and cheese
 
This really tastes like macaroni and cheese - the homemade kind, not the Kraft kind. Made this for dinner tonite... I doubled the recipe, because I have a hungry hubby.. and he enjoyed it. I used 3 eggs, rather than 4.. and really for the taste I was seeking, I should have just elminated the eggs entirely... cause it was more of quiche.. which I like, but wasnt what I was seeking. so.. next time, no eggs for me for this recipe. Very good tho. :)


1 pound extra firm tofu (500gr)
2 cups grated cheddar cheese
1 egg
1/4 cup cream
salt and garlic powder (to taste)

Smash up the tofu with a fork. Or: tofu in small rectangular dices, Mix all the other ingredients and add to the tofu. Put the mixtures in a casserole dish and bake at 350°F (180°C) for 30 to 40 minutes, or until it is bubbly and lightly browned on the top.

a tablespoon or so of cooking oil does prevent it from being too dry.

Serves 4

Variations: hamburger, tuna, etc.

Whiting Filets w/creamy parmesan cheese sauce
 
Whiting Fillets


2 lb whiting fillets
2 tbsp lemon juice
½ cup grated Parmesan cheese
¼ cup butter
3 tbsp mayonnaise
3 tbsp chopped green onion
¼ tsp salt

Thaw fish if frozen. Place fillets in single layer on a well greased baking platter. Brush with lemon juice.

Combine remaining ingredients and set aside.

Broil fish for 6 minutes or until fish flakes easily when tested with a fork.

Remove from heat and spread the cheese mixture over each fillet.

Broil 2 more minutes until lightly brown.

Serves 6

Dawn's version of Lc Peanut Butter cookies
 
1-cup splenda
1-cup crunchy peanut butter
2 eggs
1-teaspoon vanilla
¼ c. Atkins bake mix


Mix all ingredients in small bowl. Drop by rounded teaspoons on to cookie sheet. Press in criss-cross fashion with a fork. Bake at 350* for 14 minutes.


Yield: 12 cookies

LC Chili versions...
 
Made this last night for dinner, and it was even better today as a leftover, very filling.



Dawn's Low carb Chili

Great Crockpot meal!


1 lb ground beef
3 cans crushed tomatoes (standard size)
¼ c. green onions
¼ c chili powder or to taste
2 Green onions chopped
2 tsp salt
1 tablespoon Splenda
1 can of mushrooms (4 oz)
1 can of red kidney beans, drained and rinsed

Spices and other ingredients to use: Garlic, Oregano, cumin, pepper, Tabasco sauce, crushed red pepper, cinnamon, allspice, cayenne pepper.

You can also add green peppers if you like…I don’t like peppers, so you won’t see them in my recipes, sorry!

If you are on induction, omit the beans, but I have included them in the calorie/carb count at the end. For a lower fat count, use 1 lb of ground turkey.

Brown beef, add spices to beef while simmering. Drain. In saucepan, or crockpot add remaining seasonings and ingredients.

For even lower carbs, you can use tomato paste and ½ cup of water instead and 14 oz crushed tomatoes. Approx carb for that substitution: 5-6 per serving.

Serve w/sour cream, shredded cheese or a low carb tortilla!

Yield: 12 Servings

Strawberry Cheesecake
 
NUMBER OF SERVINGS: 6

8 ounces cream cheese
4 ounces half-and-half
4 packets Splenda
2 eggs
2 teaspoons vanilla extract
1 cup strawberries, sliced
1/2 cup sour cream

Preheat oven to 350°. In a blender or food processor, combine cream cheese, half-and-half, 3 packets of sweetener, eggs and vanilla extract. Blend until completely smooth. Pour into an 8-inch ceramic or Pyrex pie pan.† Bake for 25 minutes. Chill well. Garnish with sliced strawberries and sour cream (to which 1 packet sweetener is added).
