We will be doing a family camping trip in June. Many are lo-fatters who eat beans and rice, etc. I don't want to forfeit my diet, so am looking for backpacking/camping suggesions for food that won't offend the others.

How about LC Chili found on LC Luxury Site under special ingredients section made with Eden Black Soy Beans. There is also a bean recipe. I have made both and they are very good. The Black Soy Beans are very low in carbs.

OMIGOD!

I just bought a few cans of these today. They have 8 carbs for half a cup, 7 of which is fibre, so only *2 carbs* a cup! (Can this be possible? Is there a misprint on the label???) And they taste great! I was expecting something, you know soyish tasting (i.e. bad), and weird looking, and with a weird texture, and expensive to boot. Well, they taste and have a texture like any other bean, and, at $2.29 a can, are only moderately expensive. I think I'm in love. I think I'll go back and buy out the store.

I found these little treasures at Caper's on Robson Street in Vancouver, by the way.

I agree Rachel, they are great tasting and are very Low Carb. Anyone should be able to get these specific Black Soy Beans where stores carry other Eden products. I got my local store to special order them and I bought several cans at a time. Make the chili recipe and bean recipe and freeze both. If I want a quick meal, I just cook individual packets in the microwave.

Great Idea! Thanks!!! Being a working MOM, and dealing with shuttling children to various activities after school, homework, etc., I am always looking for quick, easy, good options for dinner.
