Pumpkin "pancake"
 
I was craving something this morning so came up with this on the fly. Was pretty tasty.

1/2 cup canned pure pumpkin (not pumpkin pie filling)
1 Tbsp of coconut flour
1 egg
1/2 tsp of vanilla extract
1/2 tsp each of cinnamon, nutmeg
1/4 tsp of ground ginger

Mix everything together in a small bowl and let it sit for about five minutes.

Heat a skillet over medium heat, grease ( I used 1/2 tsp of coconut oil, could use butter here). When hot, drop pancakes into it and cook. Let cook 3-4 minutes per side, they will seem like they aren't cooking as they will remain a little loose and may break a bit when turning (not like regular stiff pancakes, they also won't bubble on top like regular pancakes). They should be brown when you turn them.

I got two decent sized 'cakes' out of this recipe, only ate one, topped with some raw walnuts and a drizzle of sugar free maple syrup. Reminded me of a cross between pumpkin pie and a morning glory muffin with the walnuts added. :)

It sound really good. I am going to make them and freeze them for a fasst breakfast. I think that it could also be the basis for some other variations, such as crepe something. I think you're onto something!

Sounds good! Just need a substitute for egg. :\ Maybe some flax meal.

Maybe - it's what gives it a rise and holds it together. Maybe some baking powder to rise it and something else to bind it?

I think flax meal added might make the texture funny on this - though if you used the goop (sorry, you know the slime that comes off when it's soaked in water - that people use to substitute for eggs? Very technical of me :D), it might be ok.

I was thinking about the goop. :-) I think people often do use flax to replace egg. Well, I shall have to experiment!

what about chia seeds to bind it? I use a recipe for crackers that has sunflower seeds, pumpkin seeds, sesame seeds, and chia seeds. A slurry of chia seeds and water holds the whole thing together:

We made the endurance crackers today. Next time I'm going to use less garlic (the fresh was a little strong), and maybe break down the pumpkin seeds a little bit -- they were just a little too "seedy." But good recipe in general, and will be great with cheese or butter.
